Blood Orange Pound Cake

Ingredients
1 1/2 cup all-purpose flour
2 tsp baking powder
1/2 tsp sea salt
3/4 cup siggi’s Plain skyr
1/2 cup sugar
4 eggs, large
zest of 2 blood oranges (about 2 tsp)
1/2 cup extra virgin olive oil
Preparation
Preheat the oven to 350°F.
Butter a standard size loaf pan with butter and a bit of flour.
In a larger bowl, sift together the flour, baking powder, and salt.
In a separate bowl, add the skyr, sugar, eggs and orange zest. Slowly add the dry mix to the wet and combine well. Lastly, add the olive oil into the mixture and mix well.
Pour the mix into the prepared pan and bake for about 25 minutes. Turn once and bake for an additional 25 minutes or until a cake tester comes out clean.
